QUESOS CON DOP

QUESOS CON DOP
The Protected Designation of Origin (PDO) label — Denominación de Origen Protegida (DOP) in Spanish — protects and promotes quality cheeses which are produced, processed and prepared in a given geographical area using recognised know-how. The Protected Geographical Indication (PGI) label — or Indicación Geografica Protegida (IGP) — distinguishes and guarantees a cheese’s geographical uniqueness and quality. At least one of the stages of production, processing or preparation takes place in the area. The Regulatory Council oversees production facilities and procedures, ingredients and other key factors affecting cheese quality and authenticity. All PDO cheeses bear the Regulatory Council label and logo and are assigned a traceable ID number. Spain currently produces 26 different PDO cheeses recognized by the European Union.
